Region: Bendigo Hills, Central Otago, New Zealand.

Winemaking: With gentle and meticulous care the fruit was hand-picked and hand-sorted before being destemmed into a 700L Italian Amphora with 25% whole cluster.  A slow, cool spontaneous ferment followed, with a hand pigéage of the cap daily.  After 27 days the wine was drained and gently pressed, before being returned to amphora for further aging.  The wine was racked, settled, and bottled unfined and unfiltered in November 2021.

Tasting Notes: Aromas of ripe dark morello cherries and plums with hints of cinnamon bark and wild thyme.  Juicy raspberry and vibrant brambly red fruits on the palate are followed by lacey fine tannins and a lengthy elegant finish.

Technical: Alcohol - 13.5%.  pH - 3.64g/l.  TA - 5.4g/l.  RS - Dry.  Contains sulphites.  BioGro certified organic and vegan friendly.

"Certified organic, the 2020 vintage (5*) was estate-grown and hand-picked in the most east-facing block in the Trig Hill Vineyard at Bendigo. Fermented and aged for six months in a clay amphora, it was then matured for a year in seasoned oak barriques and bottled unfined and unfiltered. Deep ruby, it is mouthfilling and intensely varietal, with very generous cherry, plum, herb and spice flavours, complex, savoury and harmonious, and a well-rounded finish." - Michael Cooper, 5/5 stars
