Description
Region: Bendigo Hills, Central Otago, New Zealand
Winemaking: The grapes were hand harvested, carefully sorted and destemmed into large format French Oak cuves for fermentation. A daily interaction of gentle pige'age or pump overs for careful extraction and development of the tannin. After 4 weeks, the wine was drained, gently pressed, and racked into select French Oak puncheons (25% new). After 14 months e'levage, the wine was carefully racked, and bottled unfined, and unfiltered.
Tasting Notes: Enticing aromas of plums, dark cherries, and Christmas cake are intertwined with spicy notes of tamarillo, clove, vanilla and savoury cacao. Powdery tannins coat the palate and gently taper towards a lengthy smooth finish.
Technical: Alcohol - 13.5%. pH - 3.8g/l. TA - 5.6g/l. RS - dry. Contains sulphites. Certified organic and vegan friendly.
