Description

Region: Bendigo Hills, Central Otago, New Zealand.

Winemaking: With gentle and meticulous care the fruit was hand-picked and hand-sorted before being destemmed into a 700L Italian Amphora, 25% whole cluster.  A slow cool spontaneous ferment follows, with a hand pigéage of the cap daily.  After 27 days the wine was drained and gently pressed, before being returned to amphora for further aging.  The wine was racked, settled, and bottled unfined and unfiltered in November 2021.

Tasting Notes: An intriguing nose of doris plum, cocoa, lavender, and dried rose petals.  On the palate ample spice, dark fruits, and earthy forest floor notes are underpinned by chalky fine tannins which frame the fruit and provide structure for a long complex finish.

Technical: Alcohol - 13.5%.  pH - 3.67g/l.  TA - 5.5g/l.  RS - Dry.  Contains sulphites.  BioGro certified organic and vegan friendly.
