“Currently on sale, the 2015 vintage is a bright, light lemon/green, richly scented wine, with a powerful presence. Mouthfilling, vigorous and dry (3.5 grams/litre of residual sugar), it has concentrated lemon, apple and spice flavours, developing bottle-aged complexity, and a long, tightly structured finish. Tasting Note: A powerful nose of benzyne and kerosene with a well balanced palate of honeysuckle and rhubarb. A crisp citrus acidity is matched with a lengthy finish.
Winemaking Notes: The grapes were hand harvested and whole bunch pressed. The juice was cold settled for 48 hours prior to racking. The stainless steel portion 80% was fermented for 32 days with cultured yeast, selected to retain the varietal purity and 20% was fermented in older French oak and underwent malolactic fermentation. The wine was racked post ferment and matured on light lees for 6 months prior to bottling.
