Description
Region: Bendigo Hills, Central Otago, New Zealand
Winemaking: The grapes were hand harvested, carefully sorted, and destemmed into large format French Oak cuvees for fermentation. A daily regime of gentle pigéage and pump overs for careful extraction and development of the tannin. After 4 weeks, the wine was drained, gently pressed, settled, and racked into select oak barriques, of which 50% were new. After 14 months elevage, the wine was carefully racked, bottled unfined and unfiltered.
Tasting Notes: Rich aromas of plums, dark cherries, and Christmas cake mixed with spicey notes of tamarillo, clove, vanilla, plush fruit, and chocolatey characters with a soft palate and a toastie finish.
Technical: Alcohol - 14.5%. pH - 3.81g/l. TA - 5.6g/l. RS - dry. Contains sulphites.
